The Bistro-by-the-Sea Restaurant and Private Banquet Facility is owned and operated by the husband and wife team of Chef Tim Coyne and General Manager Libby Eaton. We are conveniently located on Hwy 70 within a short walk to the Hampton Inn which is located on the water of Bogue Sound of Morehead City.
Both Tim and Libby take pride in the fact that Tim is "cooking on the line" and Libby is greeting their guests every night they are open.
To ensure a creative, consistent product, the restaurant is open only five days a week. By keeping positive energy flow, it is passed on through their staff by the impeccable service and attention to detail that is evident during your experience with them.
Chef Tim grew up in his relative's Italian restaurant and worked every position. To increase his knowledge, he earned a Culinary Arts degree from Schoolcraft College in Livonia, MI. Libby graduated from Ball State University in Muncie, IN with a Journalism/PR degree.
Due to his passion & love of "old school-slow cooking," Chef Tim & his professional kitchen staff stride to prepare fresh, local dishes without the use of "fast-forced" cooking methods.
Yes, you will probably have a longer wait for the Bistro’s creations and it may not be for everyone all the time. However, we do believe in keeping the "made-to-order" cooking style alive. So, if you decide to join the Bistro, slow down, kick back & enjoy our "dining experience" while listening to live entertainment at the piano bar.
